    Turkish delight

    Make these squares of rose- and pistachio-flavoured Turkish delight to give as gifts   
    Homemade sweets and candies are always a pleasure to make and to receive. You could also try adding pure lemon extract and a drop of yellow food colour in place of the rosewater and pink colouring here.

    MAKES : 20 pieces

    INGREDIENTS

    • 375g caster sugar
    • juice of 1 lemon
    • 25g gelatin powder
    • 100g cornflour
    • 25g icing sugar
    • sunflower oil, for brushing the tin
    • 2-3 tsp rosewater
    • pink food-colouring paste
    • 50g shelled unsalted pistachios, roughly chopped

    METHOD

    Tip the sugar into a medium-sized pan and add the lemon juice and 300ml of water.
    Stir over a low heat to dissolve the sugar, then bring gently to the boil.
    Mix the gelatin with 75g of the cornflour and 200ml water and add to the pan.
    Stir constantly until the gelatin has dissolved, then continue  to simmer very gently for 20 minutes, until thickened.
    Mix together the remaining cornflour and the icing sugar.
    Lightly oil a 20cm square baking tin with a depth of  4-5cm and line it with cling film.
    Lightly dust the cling film with some of the cornflour mixture, tipping out the excess.
    Remove the pan from the heat and set aside to cool. Add the rosewater, food colouring and pistachios and pour the mixture into the tin.
    Spread level and leave to cool for at least four hours, or until completely set before cutting into squares and dusting  with the rest of the icing sugar and cornflour mixture.
    Stored in an airtight container, these will keep for about a week.

    Ingredients:

    2 rice-cups Japanese short-grain rice (Equivalent to 1 ½ cup (360 ml))
    3 dried shiitake mushrooms (.5 oz / 15 g)
    ½ cup (120 ml) water for hydrating dried shiitake mushrooms
    ⅓ package konnnyaku (3 oz /85 g)
    1 piece aburaage (deep fried pouch) (.7 oz / 20 g)
    3 inch (7.5 cm) carrot (2 oz / 60 g)
    4 inch (10 cm) gobo (burdock root) (1 oz / 35 g)
    1 skinless boneless chicken thigh (4.8 oz / 135g)
    1 ½ cup (350 ml) dashi
    1 ½ Tbsp. mirin
    1 ½ Tbsp. soy sauce
    a small bunch mitsuba, or 1 green onion

    Make Your Own: Pepperoni Pizza


    Learn how to make your own pizza crust, pizza sauce and pepperoni pizza that will rival any take-out pizza joint! These are cheaper to make than take-out, don't take a lot of time and you can use whatever ingredients you like to top the pizza! What you'll need: for the sauce: 1 (6oz) can tomato paste 3/4 cup water 1 tsp onion powder 1 tsp dried basil 1/2 tsp garlic powder 1/2 tsp dried oregano 1/2 tsp salt 1 Tbsp grated parmesan cheese In a small saucepan, combine all ingredients except the cheese and stirring constantly, heat over medium heat until bubbly. Remove from heat and stir in cheese until melted. Set aside to cool before using. Will make TWO 16" pizzas. for the crust: 2 Tbsp sugar 3/4 cup warm water (around 100*F) 1 tsp active dry yeast 1 tsp salt 1 Tbsp olive oil 2 cups AP flour In a stand mixer or a large bowl by hand, combine sugar and water. Sprinkle yeast over the top of the water and let bloom for about 10 minutes. Add in salt, olive oil and flour and mix to form a dough. Dough will be sticky! Knead by machine for about a minute or by hand for 2-3 using only minimal flour to prevent sticking. Put into an oiled bowl and toss to coat and cover with a damp towel. Put into a warm place to rise for about an hour or until double in size. for the pizza: 1 recipe pizza crust 1/2 recipe pizza sauce 2 cups (8oz) mozzarella cheese 3 oz pepperoni 1 Tbsp cornmeal optional ingredients for additional or different toppings of your choice Preheat oven to 500*F. Using a 16" pizza pan, sprinkle or dust the pan lightly with the cornmeal to prevent sticking. Turn your dough out without punching down and starting in the center and using only your fingertips, press dough out to the edges of the pizza pan, leaving a slight lip around the outside. Spread half the pizza sauce on the top of the crust to about 3/4" of the edge. Top with cheese and then whatever topping you so choose. Bake for 7 minutes or until golden brown and toppings are cooked. WATCH CLOSELY!!! It can go from undone to burnt in about one minute! Slice into 8 pieces and serve it up! Enjoy!
